Rasmalai Recipe in Urdu

Rus Malai is used as a dessert in Pakistan and India. It is made of milk, therefore it is a nutritious food to be enjoyed after meal. Ras malai is a sweet dish and delicious enough to be enjoyed in all get together parties.

Ingredients for cheese:
Milk with cream = 2 liters
Lemon juice = 15 ml / 1 Tb
Ingredients for Rabri:
Milk = 500 ml / 1 ½ cup
Sugar = ½ cup
Crushed pistachio = 5 Ts
Saffron mixed in 15 ml milk = ¼ Ts
Ingredients for balls:
Maida or white flour = 4 Ts
Baking powder = ¾ Ts
Water = 4 cups
Sugar = 4 ½ cups / 900 gm
Recipe:
Take a pan, boil the milk in it and after boiling it let it to cool down for 3 – 4 minutes then add lemon juice. Strain the milk with cheese cloth so that solid particles (cheese) could be place in a separate bowl. Mix the cheese with the help of your fingers to make a paste like mixture, add Maida and baking powder in this mixture and knead it. Make 20 balls with it. Take another pan, put four cups of water and mix 900 gm of sugar in it. Place this pan on the medium heat and add cheese balls in the water. Cook it for the time that all balls take to expand. After that put the stove off and take all the balls out of the water.
Rabri:
For making Rabri, boil the milk until half of the milk gets dry then add sugar and keep it in refrigerator. Pour the Rabri on the cheese balls and place it in the refrigerator for at least 3 hours. Garnish it with pistachio and almonds.
